Pepper Soup


I have been on a kick to buy Mexican products if I can, as we do live in Mexico, so I look closely at labels on all foods. I have been successful in finding sweet tasting Mexican olive oil, pure vanilla and a number of herbs and spices. Look what I found at Walmart in Ajijic, Mexico! Sweet peppers grown in Irapuato, Guanajuato, Mexico by Sunset Growers who have their head office in Kingsville, Ontario, Canada. They have a super website where I found the recipe for the soup in the picture above -Roasted Sweet Pepper Soup with Lime Cream, a nice low carb dish. Today I am making one of their other recipes – Chilled Cucumber Soup, nice for a warm evening. If you know of any other good products produced in Mexico, please drop me a line.
